Hiding Vegetables Has Never Been So Tasty. AND EASY.

2012-02-02_1It seems every magazine we open, professionals are constantly telling us to eat more veggies. They give us tips like avoiding the middle aisle of grocery stores and sticking to the perimeters where the vegetables are easy to find. Easy enough. They tell us to make tasty green side dishes every night for dinner to add some nutritional balance to our plates. But for some, especially kids and the men in our lives, vegetables are not always their favorite option. Meat and potatoes? Yes please. Extra dessert? You bet! But vegetables? EEK!

In February's issue of Redbook we ran across a quick blurb titled, "Put veggies where they'll never see 'em" and we were super intrigued to head to their website and learn these new sneaky tricks!

Here's one quick example they give (taken directly from their site):

Use it in:
Guacamole: Use in place of ⅓ of the avocado. Lasagna: Substitute for ⅓ of the sauce with puree. Chili: Stir in ½ cup per batch.

2 cups broccoli florets, fresh or frozen
2 cups raw baby spinach
1cup frozen sweet peas

Steam broccoli and spinach in a steamer over 2 inches of water, about 10 minutes or until very tender. Add peas for the last 2 minutes. Drain; place in a food processor with 2 Tbsp water. Puree on high until smooth.
