An Authentic Recipe for Indian Rice Pudding Day

Chef Kiran's Rice Pudding

Wednesday June 27th is Indian Rice Pudding Day. Kiran's restaurant in Houston will be celebrating this special day by providing each guest a complimentary Indian Rice Pudding, or Kheer, with their meal. If your schedule won't allow you to visit Chef Kiran at her restaurant, no worries! She was kind enough to share her recipe with us! Enjoy!

Recipe for Kheer

½ cup Basmati rice
½ gallon whole milk
1 teaspoon (cardamom, clove, nutmeg & cinnamon) powder
¼ teaspoon saffron threads
2 cups sugar
¼ cup almond slivers
¼ cup chopped Pistachio nuts

Soak rice in cold water for half an hour. Boil milk in heavy bottomed pan. Add spice mix and saffron. Add rice and boil till tender and milk has a creamy consistency. Add sugar and nuts. Serve cold. Makes 6 servings.
