BREAKFAST TACOS

Get the day off to a great start with these delicious and nutritious breakfast tacos. Find all the fresh ingredients, including fresh tortillas, at Fiesta!

Egg & Chorizo:

  • 1/2 Cup Chorizo
  • 4 Eggs (beaten)
  • Flour Tortillas or Corn Tortillas
  • Salt & Pepper

Bacon, Potato & Egg:

  • 4 Strips of cooked bacon
  • 4 Eggs (beaten) 
  • 1/2 Diced and cooked Potato
  • 1/4 cup diced onion 
  • Flour Tortillas
  • Corn Tortillas
  • Salt & Pepper

Directions:

Egg & Chorizo:

  1. Heat 1/2 teaspoon of oil.
  2. Cook the chorizo and once done add 4 beaten eggs. Season with salt and pepper.
  3. While they are cooking, heat the tortillas of your choice.
  4. Assemble the tacos with the cooked eggs with chorizo.
  5. Serve with your favorite sauce.

Bacon, Potato & Egg:

  1. Heat 1 tablespoon of oil in a skillet.
  2. Add the chopped onion and wait for it to be translucent. Add the cooked potatoes and season with salt and pepper,
  3. After 3 minutes add the beaten eggs and stir constantly.
  4. Have the bacon ready to add in the tacos.
  5. While the egg cooks, heat the tortillas of your choice.
  6. Assemble the tacos with the egg and potato mixture and place a slice of bacon on top.
  7. Serve with your favorite sauce.
