COCONUT PINK LEMONADE JELLY

Pink Paradise Delight: Refreshing Coconut Pink Lemonade Gelatine Recipe

Ingredients:

  • 8 yellow lemons
  • 1 cup of raspberries
  • 1 cup of strawberries
  • ¾ cup brown sugar
  • 1 cup of hot water
  • 1 liter of coconut water
  • 3 sachets of powdered gelatin
  • ½ cup of cold water to hydrate

Preparation:

  1. Hydrate gelatin: add gelatin to 1/2 cup of cold water, mix and let sit until it hardens.
  2. Cut lemons in half and remove the pulp with the help of a spoon and knife. Place the lemon peels in a muffin tin and place in the freezer while you prepare the recipe.
  3. In a blender add the pulp of the pitted lemons, sugar or hot water, blend well and strain.
  4. Blend the raspberries and strawberries until puree and strain.
  5. In a large jug add the lemon mixture, coconut water, and puree and mix well.
  6. Microwave the gelatin for about 25 seconds. until it melts and is liquid and transparent.
  7. Add the gelatin to the pink lemonade in the form of a thread and blend.
  8. Add the mixture into the lemon peels. Let it rest in the refrigerator until set.
