CHIFRIJO

Deliciously Authentic Chifrijo: A Perfect Blend of Flavor and Tradition

Ingredients:

  • 1 tablespoon vegetable oil
  • 1/2 onion finely chopped
  • 2 cloves of garlic, finely chopped
  • 2 cups of cooked or canned red beans (drained)
  • 2 cups of cooked white rice Santa Fe
  • 500 g of pork chicharrón. In our restaurant you can find excellent quality pork crackling.
  • 2 cups of pico de gallo (a mixture of tomato, onion, cilantro, lime and salt to taste).
  • 1 ripe avocado (optional).
  • Worcestershire sauce of your choice (optional).
  • Corn Chips / Tostadas
  • Salt to taste.

Preparation:

  1. In a medium or large skillet, add a tablespoon of oil and heat.
  2. Add the onion and sauté, when ready add the chopped garlic and season with salt and pepper.  Stir well and set aside.
  3. Cook the La Fe white rice according to your usual method. It should be grainy. Set aside.
  4. For the chicharrón, you can use chicharrón with meat that we have available in all our Restaurants inside the store.  Heat in a pan and cut into pieces
  5. For the pico de gallo:
  6. 300 gr of fresh pico de gallo (you can buy it made in our supermarket or make it with tomato, onion, chile, cilantro and salt to taste).
