Deliciously Authentic Chifrijo: A Perfect Blend of Flavor and Tradition
Ingredients:
- 1 tablespoon vegetable oil
- 1/2 onion finely chopped
- 2 cloves of garlic, finely chopped
- 2 cups of cooked or canned red beans (drained)
- 2 cups of cooked white rice Santa Fe
- 500 g of pork chicharrón. In our restaurant you can find excellent quality pork crackling.
- 2 cups of pico de gallo (a mixture of tomato, onion, cilantro, lime and salt to taste).
- 1 ripe avocado (optional).
- Worcestershire sauce of your choice (optional).
- Corn Chips / Tostadas
- Salt to taste.
Preparation:
- In a medium or large skillet, add a tablespoon of oil and heat.
- Add the onion and sauté, when ready add the chopped garlic and season with salt and pepper. Stir well and set aside.
- Cook the La Fe white rice according to your usual method. It should be grainy. Set aside.
- For the chicharrón, you can use chicharrón with meat that we have available in all our Restaurants inside the store. Heat in a pan and cut into pieces
- For the pico de gallo:
- 300 gr of fresh pico de gallo (you can buy it made in our supermarket or make it with tomato, onion, chile, cilantro and salt to taste).
