CHICKEN SALAD CUCUMBER

Try a fresh salad with chicken and cucumbers, they’re part of our weekly specials! This is a different way to prepare vegetables and chicken, and we think you’ll love it. In just 20 min you will have an easy, fast and low-cost meal:

For the salad

2 cups chicken cooked and shredded
1/4 cups celery, finely chopped
1/8 cups red onion, finely chopped
1/4 cups parsley, finely chopped1 tablespoon curry powder1 tablespoon chives, finely chopped
1/4 cups feta cheese, diced1 tablespoon lemon juice
1/2 cups Greek yogurt1 tablespoon garlic powder
1 tablespoon of mustard1 tablespoon salt, for salad, and to season cucumber
1 pinch of pepper, for salad, and to season cucumber
2 cucumbers
2 tablespoons olive oil

To decorate

1 serrano pepper, sliced

1 radish, cut into half moons

1 spring onion, cut into rings

Salad Preparation

In a bowl mix all the ingredients of the salad, except for the olive oil, season at the end with salt and pepper to taste. Peel and cut the cucumbers in half and remove the seeds with the help of a spoon, season with olive oil, salt and pepper.Fill the cucumbers with the chicken salad and decorate with the sliced radish and serrano pepper.
