Flavorful Chicken Flautas, Perfect for a Weekend Meal
Ingredients:
- 1 cup Vegetable Oil
- 3/4 cup finely chopped yellow onion (approximately 1 cup)
- 1 tsp finely minced garlic
- 1 package MAMA LYCHA® TOMATO SAUCE
- 1/2 cup water
- Salt and pepper to taste
- 2 cups shredded chicken
- 2 tbsp finely chopped fresh cilantro
- 16 Fiesta® corn tortillas
- 1 Package Costa del Sol® Beans
To serve:
- Shredded lettuce, Mexican cream, and fresh cheese
Preparation:
- Heat 2 tablespoons of oil in a medium skillet over medium-high heat. Add the onions and garlic and cook, stirring occasionally, until the onions are translucent, about 10 minutes. Stir in the MAMA LYCHA® TOMATO SAUCE and water. Once it boils, reduce heat to medium-low and simmer, stirring occasionally, until the sauce thickens slightly, about 2-3 minutes. Stir in the shredded chicken and cilantro in the skillet, cook, stirring to coat the chicken completely with the sauce and heat through. Season with salt and pepper, remove from heat, and set aside.
- Heat the remaining vegetable oil in a medium skillet over medium-high heat. Once the oil is hot, cook the tortillas quickly, one at a time, completely submerging in the oil until soft and flexible but not brittle; about 5 seconds each. Drain on paper towels, this is to prepare the flautas.
- To form the Flautas: Place approximately 1 ½ tablespoons of chicken filling in the center of the tortilla, and roll up gently, securing the filling with a toothpick. Repeat with the remaining tortillas and chicken.
- In the same skillet, fry the flautas, approximately 5 minutes per flauta.
- Serve over a bed of lettuce and top with sour cream and cheese.
- We suggest heating the beans with a tablespoon of oil, stirring constantly. Serve the flautas with these delicious beans.
