Ingredients:
- 4 cups frozen corn kernels
- 2 tablespoons butter or vegetable oil
- 1/2 teaspoon salt
- 1/4 cup mayonnaise
- 1 cup crumbled fresh cheese (like cotija or queso fresco)
- 1 teaspoon Tajín seasoning
- Juice of 1 lime
Preparation:
- In a skillet, melt the butter or heat the oil over medium heat. Add the frozen corn kernels and sauté for a few minutes until lightly browned.
- Divide the sautéed corn among individual cups or bowls.
