Grilled Steak with Zesty Street Corn Salsa: A Flavor-Packed Summer Delight
Ingredients:
Grilled Steak
- 4 beef Skirt Steaks or Ranchera
- 2 tablespoons canola oil
- 2 tablespoons chopped garlic
- 2 tablespoons lemon juice
- 1 teaspoon ground black pepper
- 1 teaspoon Kosher salt
Street Corn Salsa
- 2 cups grilled corn
- 1 jalapeno – seeded and diced
- 1/3 cup red onion – finely diced
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 2 tablespoons lime juice
- 2 tablespoons cilantro – chopped
- 1/4 cup cotija cheese – grated
Preparation:
Grilled Steak
Combine seasoning ingredients in a small bowl. Press evenly onto Skirt Steaks.
Heat grill to medium-high. Place steaks on the grill and cook.
Be sure to rest the meat before serving.
Street Corn Salsa
Toss all ingredients together in a medium bowl.
Slice skirt steak and top with street corn salsa. Garnish with fresh lime wheels.
