Ingredients:
- 3 Roma tomatoes
- 1 beefsteak tomato
- ¼ white onion
- 3 garlic cloves
- 1 Anaheim pepper
- 1 jalapeno pepper
- 3 serrano pepper
- ½ teaspoon salt
- ¼ cup chopped cilantro
Preparation:
- Remove stems from the peppers and the tops from the tomatoes.
- Heat a griddle. Place all the peppers, onion, tomatoes and garlic.
- Toss the peppers, onion, tomatoes and garlic and continue cooking for 5-7 minutes.
- Remove the ingredients from the griddle and set aside. Peel most of the dark skin from the tomatoes and peppers.
- In the molcajete add the salt and garlic and grind until it forms a paste.
- Add the onion and grind until you get a paste.
- Add the peppers one by one, as well as the tomatoes (one by one)
- Season with salt to taste. Add chopped cilantro.
