Sweet Pineapple Fried Rice is a perfect taste for any weekday dinner.
Ingredients:
- 1 cup Basmati rice
- 1 chopped onion
- 3 cloves of garlic, chopped
- 2 carrots, chopped
- 1 red pepper, chopped
- 1/2 cashews. roughly chopped
- 2 tbsp soy sauce
- 4 tbsp vegetable broth
- 1 tbsp curry powder
- 1 cup fresh pineapple, cut into small pieces
- 2 green onion, chopped
- salt and pepper to taste
- red pepper to taste
Instructions:
Cook the rice according to package instructions.
In a large pan, heat the vegetable broth and sauté the onions for 3 min. Then add the garlic, carrots, bell pepper and cook everything for 4 minutes.
Stir in the cooked rice and season with curry and soy sauce.
Add pineapple, green onion and cashews. Season with salt, pepper and red flakes.
Stir until combined.
