
Refreshing Shrimp Ceviche: A Taste of the Tropics
Ingredients:
- 2 lbs large raw shrimp
- 1/2 cup freshly squeezed lime juice (about 8 juicy limes)
- 1/4 cup tomato juice
- 1/4 cup ketchup
- 2 tbsp MAMA LYCHA SALSA INGLESA
- A few dashes of your favorite hot sauce
- 2 cucumbers peeled, cored, and chopped
- 3 Roma tomatoes cored and chopped
- 1/2 red onion, finely chopped
- 1 bunch cilantro, finely chopped
- 2 Serrano Peppers
- 1 tsp black pepper
- Mission Tostadas
- 2 tbsp Mayonnaise
- Avoco, sliced
Preparation:
1. Fill a pot with water and bring to a boil with 1/2 onion, one clove of garlic, a sprig of celery, and salt. Bring to a boil.
2. Add the cleaned and chopped shrimp. Let it boil for 2-3 minutes.
3. Transfer to a bowl with ice water to cool down and stop the cooking process.
4. Finely chop the red onion, cucumber, cilantro, tomato, and Serrano pepper.
5. Add the cold shrimp to a bowl and add the lime juice, salt, and pepper.
6. Add the tomato juice, ketchup, and Mama Lycha Salsa Inglesa
7. Add the chopped vegetables.
8. Let it chill in the refrigerator for at least 30 minutes.
9. Enjoy on delicious MISSION tostadas with mayonnaise and avocado.
